This is my theme for gnome-panel replacement. I still have the gnome panel with systray in the upper-right corner, until it can be displayed directly in the cairo-dock.
The three menus are just text-based svg-icons.
Here's my theme:

Yes, it's nice
But in fact, I think you give us a new idea => Having the possibility to display GMenu applet (and maybe some other applets or all of them? ) with a text instead of an icon into the dock |

I still have the gnome-panel with the systray in the upper right corner (autohide) , because i want the systray and nm shown directly in the panel. I'm not a friend of Desklets, i like to see it all in one panel. I hope it will be available in Cairo-dock soon so i can deactivate the gnome-panel.
BTW: If i use the cairo-clock in the panel, the clock is allways shown on top, even when the panel is hidden. I think i did something wrong, but can't fix it. That's why the clock isn't activated.
@matttbe: Displaying applets with text would be fine. |

in the configuration of the applet, first tab
Displaying applets with text would be fine.
I think the way you did already gives a nice result. |

But it's not really "user friendly" -> need to create as many pictures as needed !! |

true, but it's a very special case (it means the icon will be quite large, and it's against the concept of dock where you quickly find items thanks to their image; otherwise it's like menus without icons) |
