It would be nice if there is a app/shortcut to hide all windows (and show the desktop)
and revert to show all windows. |

Yes, that's what I'm looking for.
But I can't find anything similar
Maybe there is nothing like this using Ubuntu 12.10 ?
I'm using Cairo Dock without the Unity-stuff. |

well, this applet is already in the package !
you can configure it for showing the desktop on clic or middle-click, or showing all the windows (Expose of Compiz), or showing all the desktops (again, a Compiz feature).
the Switcher applet also allows you to show all windows on middle-click (through a menu or Expose). |

On this screenshot, it's the icon between the Switcher and the Calendar applets:
